No more dozing off in class or school with this vegan spicy sambal scallion bread. Having just regular bread or toast in the morning isn’t going to satisfy your taste buds and wake you up for sure, so get up and get ready to bake some of this spicy bread! Sambal is the perfect ingredient when it comes to spiciness as the taste is unique, hot and tangy.

Milk bread is without a doubt my favorite bread. It probably was before and I never officially declared it until now. This spicy bread reminded me of childhood time as I used to buy chilli buns from my school's canteen.

Sambal is just a spicy chili and garlic paste that’s quite similar to Calabrian chillies. In order to make this bread, I used my tangzhong recipe to give this bun its lasting softness. I find the sambal filling much more satisfying as not only has it sweetness but saltiness and spiciness as well. The bread is not meant to be spicy – there’s a hint of it throughout the uber soft milk brad, enough to notice a hint of heat but not enough to be overpowering. Nonetheless, the sambal itself is just so aromatic and tasty, it complemented the whole bread so well.

Lately, I’ve turned to posting quite a few “home-style” dishes. I recently ate an eggplant dish out at a restaurant and I wanted to try to recreate it. It was so flavourful. Well, this is my rendition of that dish, and I have to say I like mine more. Less oil, but plenty of flavour. This vegan braised eggplant noodles with 'minced pork' (肉沫茄子) is another one of those easy dishes that you might see on the table at your parents’ or grandparents’ house!

Eggplants are quite the unique fruit (yes, it is a fruit due it to its edible seeds). Because it is more bitter and savory than I would imagine a fruit would be. It is (and should be) an essential in most households as there are a lot of delicious ways of cooking and preparing it.

ree

It’s a bit of a common misconception that eggplant is terribly tricky to cook right. It’s true that eggplant can end up awfully bland, firm, or greasy when cooked wrong. However, with the proper methods, you’ll never have to worry about that again. In this recipe, by the time the eggplant has been stir-fried and almost “braised” in the sauce, it’s tender enough to practically melt in your mouth. Plus, it is still packed with sweet, savoury, and umami-rich flavour.

Sometimes you crave the irresistible crunch of granola, but store-bought granola can be expensive and usually contains a lot of oil, sugar, and/or maple syrup. Enter vegan peanut butter banana granola. This granola is refined sugar-free and has a fair amount of protein thanks to the peanut butter! The part we can all agree on is that yummy peanut butter sauce that gets mixed into everything. It’s made with lots of natural peanut butter (the kind with zero added ingredients), maple syrup, coconut oil (for crunch), vanilla, and a pinch of cinnamon. And it’s guaranteed to kick your granola up a major notch.
